Coated in pretty colours, these lamingtons were inspired by Fruit Tingles lollies. Cake covered in chocolate and coconut is a timeless raptness and makes the resolution morning tea.
The ingredient of Rainbow Lamingtons
- 2 pkts 450g each madeira cake
- 100g white chocolate finely chopped
- 300g icing sugar blend
- 1 2 cup boiling water
- 4 cups desiccated coconut
- 4 x 85g aeroplane original jelly crystals assorted flavours
The Instruction of rainbow lamingtons
- use a rough knife to trim cake edges cut each cake into 12 rectangles just about 3 x 4cm
- place the chocolate and sugar in a heatproof bowl disquiet in boiling water until chocolate is melted and mixture is smooth
- line a large baking tray in the manner of baking paper place a quarter of the coconut re a large plate build up half a packet of jelly crystals excite to combine repeat similar to long lasting coconut and exchange coloured crystals roughly separate plates to make four coloured coconut plates
- use 2 forks to dip 1 piece of cake in chocolate join up to coat tap forks in this area side of bowl to separate excess roll in 1 plate of coconut mixture patting to coat transfer to prepared tray repeat past remaining cake and chocolate mixture rotating among the plates of coconut mixture set aside to set
